Summer Favourite: Quick and Simple Cupcake Recipe

Cooking is fun, and honestly doesn't have to be as hard as some people or recipe books make out. In my eyes, if something tastes yummy, it is a success! So I've got for you my quick, easy and simple cupcake recipe, which is a summer favourite of mine! Try it out and send me your pics!
Ingredients:
4oz Stork Margarine
4oz Caster Sugar
2 Eggs
4oz Self-Raising Flour
1 Teaspoon of Baking Powder
Vanilla Essence
Icing:
Stork Margarine
Spoons Icing Sugar


Step 1: Obviously make sure you have all of the above ingredients- there's nothing worse than starting to bake and half way through realising you haven't got one of the key ingredients!! Pre-heat your oven to about 190 degrees!

Step 2: Weigh out 4oz of margarine and put into a mixing bowl- now it doesn't have to be Stork, but stork is specifically for cakes!


Step 3: Weigh out 4oz of caster sugar and pour into the same mixing bowl. 


Step 4: Mix the marg and sugar until light and fluffy!


Step 5: Add two eggs, one at a time. Give them a quick sniff before hand to ensure they aren't bad eggs! I once forgot, and soon learnt my lesson, after having to start again because of the smell!


Step 6: Beat the mixture together, being careful not to let it curdle!


Step 7: Weigh out 4oz of self-raising flour and and sieve into the mixture.


Step 8: Add a teaspoon of baking powder to the mixture.

Step 9:  Mix in a circle of 8 pattern to allow the air to get in to the mixture!


Step 10: Add vanilla essence for yumminess! :)

Step 11: Pour into paper cases on baking trays and pop them in the oven for around 10-15 minutes depending on how golden you want them!

Step 12: Once cooked and cooled you are ready for the icing. Mix together marg and icing sugar. This is where I usually estimate because it all depends on how buttery/sweet you like it and how much of it you want!

Voila! Sweet cakes! This process all in all probably takes about 40 minutes, if you include cooling time!
